Hello Abraham,
You can create language overrides in the Joomla admin interface. Go to System and click "Languages: Overrides". For the registration plugin, which adds newsletter options to your normal Joomla registration pages, select "Dutch - Administrator" from the top-left dropdown. Click "New" to create a new override.
On the right you can search for existing items. Select "Constant" and enter "joomlamailer", press search. This will show you all language constants you can translate. Create an override for each you want to translate.
In case you're referring to the Module, you need to create overrides for "Dutch - Site" and search for the constant "jm_" to find available items.
You can also check these files:
Plugin: /administrator/languages/en-GB/en-GB.plg_user_joomlamailer.ini
Module: /language/en-GB/en-GB.mod_mailchimpsignup.ini
If you want you can translate the whole files and send them to support@joomlamailer.com and I will include it in the next release. Then we will have dutch working out of the box without overrides.
Best regards,
Peter

My previous instructions were for Joomla 4/5/6. Are you using Joomla 3? This would explain you can't find it.
First name/last name are merge fields coming directly from Mailchimp. You can change the field labels in Mailchimp and they are not translatable. Login to your mailchimp account and go to Audience, then click More Options and select Audience fields and merge tags. Here you can modify the field labels.
I don't know what element you mean with "subscribe". Maybe you can attach a screenshot.
